Pancakes and Pizza Bowls

I had some coconut flour in the freezer from an attempt to cook gluten-free for a friend. Wanting to use it up, I made coconut flour pancakes for the kids.


They look fine, but I couldn't get them to cook all the way through no matter how long I stood over the stove. The inside had a mashed potato consistency. Jackson and Olivia insisted they did not care, so I served 'em up with blueberries and maple syrup.


Jackson ended up with an upset tummy. It may have been because of the coconut flour's high fiber content, or because he ate four pancakes. I don't know if I'll do any more cooking with this flour. 

Later, sous-chef Olivia helped me fix dinner.


Miss Olive-Fingers and I made the Pizza Bowls from Isa Does It. We used Field Roast apple sage sausages, our favorite. I have a really cheap blender, so my sauce wasn't super-smooth, and looked sort of gross. But the taste was phenomenal. Tony was hoarding the leftovers, saying, "This is so good!"
