Relax

For my birthday, Tony ordered me a light-up sign from a local furniture store. It was custom made, so it took awhile before it was ready. But now it shines proudly in our living room, and I love it.

Relaxing is one thing Jackson and Olivia know how to do. PJ's until lunchtime? Why not.

Casseroles are a relaxing way to cook. One dish, easy. I made the Quinoa Cauliflower Biryani from Vegan Richa's Indian Kitchen, except I used broccoli since that is what I had. The flavors are just so complex and it tastes very healthy, not heavy at all, in spite of technically being a casserole! I have been cooking a LOT from this book lately, get ready for a whole post on all the good stuff I've tried.

Bonus Olivia, because I can't even with her posing.

She got lots of compliments at school on her pigtails, so now she is willing to let me style her hair more often. Yay!

Prep

Lately I have been doing quite a bit of food prep on Sunday afternoons. This goes hand-in-hand with trying to eat more whole foods/less sugar. Having healthy food ready to go makes it much easier to avoid just grabbing a bowl of chocolate chips and calling it dinner. Not that I, umm, ever did that *wipes chocolate smudge from chin*.

Roasted tofu. I just toss it with 1 tsp. olive oil, salt and pepper. Easy to throw in anything for some extra protein.

Steel cut oats. Better for me than rolled oats, but take too long to prepare in the morning when I am trying to get everyone out the door. So I make a few days' worth in advance and divide into portions. In the mornings, I pour in some soymilk and a dollop of peanut butter, microwave for a minute, and dig in.

Blueberry waffles. Jackson eats these every morning. (From Isa Does It.)

Roasted chickpeas. Toss with 1 tsp. olive oil, and change up the seasonings. These were seasoned with adobo for a savory flavor.

I also make Tony some kind of grain salad to take for lunch a few days each week, saving us $$ since he doesn't have to go out to eat every day. This week I gave him quinoa and black beans with a cilantro lime dressing.

An oldie-but-goodie that Olivia devours as an after-school snack, Averie's peanut butter chocolate chip protein balls.

Oh She Glows' Glo bars, the only granola bar we make anymore! So easy and good.

Prepping gives me more time to sit down during the week and enjoy my kids in the moment. Like that moment when Olivia dumped out her piggy bank and rolled around in the loose change.

4th of July

We spend July 4th weekend up in Oklahoma. We were just in time for the grand opening of the new water park in Shawnee.

It was just what we needed to get the kids out of my mother in law's house for a few hours and let them get their sillies out.

Tony and I got in too. I don't understand parents who don't get in the water. I am not just going to sit there and sweat for several hours. I'm getting in.

We had a low key holiday, hanging around the house. Jackson and Olivia got to meet their cousins from California for the first time. They just happened to be visiting at the same time as us.

One evening, my mother-in-law volunteered to watch the kids so Tony and I could have a date night in the city. Believe it or not we passed up getting Chinese fast food from a convenience store.

We had heard good things about The Mule and it did not let us down. Their specialty cocktails are all variations on the Moscow Mule. I had the Okie Mule, made with hibiscus syrup, vodka, ginger beer, and lime. It was amazing. I wish I was drinking one (or three) now.

My handsome husband.

We started with the craziest stuffed mushrooms either of us had ever encountered. They were loaded with cashew cheeze, grilled jalapenos, barbecue sauce, and guac.  Hot and gooey and amazing.

I had the Herbivore sandwich with cashew cheeze, beets, mushrooms, tomato pesto, onions, jalapenos, and avocado. That is a lot of ingredients to pile onto a sandwich and I was impressed. The vegan side of the day was quinoa with butternut squash and pecans. It was sweet like something you would eat for breakfast, kind of an odd pairing but it worked.

My other handsome gentleman, always ready for a road trip.

Drawing Lessons

I attempted to make overnight chia pudding with chia seeds, almond milk, and blackberries. It didn't really gel and I realized 'llI need to add cashew cream or something to thicken it into an actual pudding. So my breakfast was blackberry milk.

Morning snack, lemonade with chia seeds. This I love.

Lunch, avocado toast with basil and hemp seeds. So...I'm weird about foods not filling me up. Like I'm always complaining about quinoa...I eat it and I'm hungry again and hour later. Well friends, this was so good and so damn filling.

Dinner, baked falafel from Appetite for Reduction, tabouli, and lemon tahini dipping sauce. Satisfying in spite of the fact that the tabouli was made with quinoa.

Tonight I took Jackson and Olivia to a drawing class at the library. The teacher is fantastic with kids; she also runs the farmer's market at Jackson's school.

They drew several different dinosaurs and learned to use a grid to keep things proportional. An educational and fun evening.

Cookbook Review: Gluten-Free & Vegan for the Whole Family

I received a review copy of Jennifer Katzinger's new cookbook, Gluten-Free & Vegan for the Whole Family: Nutritious Plant-Based Meals and Snacks Everyone Will Love. As I browsed through it, I bookmarked several recipes that I wanted to try.

First, Walnut Almond Milk. Making homemade nut milks is easy and, depending on the price of nuts in your area, probably cheaper than buying cartons at the store. I made a double batch and stored it in an old kombucha jug. The milk is creamy with a touch of maple sweetness, perfect to use in recipes and on your morning cereal.

I used the milk in this Quinoa Porridge. Quite a tasty breakfast. Gently sweetened quinoa is topped with fresh fruit, nuts, and coconut. As usual, quinoa didn't keep me full and I was hungry again two hours later. But that's quinoa's fault, not Katzinger's.

I made Nut Butter Energy Bars for Jackson and Olivia's breakfast and after-school snacks. They're no-bake and I wondered if they'd fall apart, but they held together quite well after spending an hour firming up in the fridge. They're chock full of healthy stuff like flax meal, sunflower seeds, and pumpkin seeds, but sweet and craveable thanks to almond butter and maple syrup.

The nut milk also went into this Blueberry Parsley Smoothie. Katzinger is a genius to throw parsley into this recipe. She calls for a good amount, but you don't taste it at all. Parsley, typically used as a garnish in this country, is such a nutritional powerhouse! It's full of vitamins K and C.

To break in my new popsicle mold, a Mother's Day gift, I made the World's Healthiest Popsicles. I can see how they would earn that title, as they're made from avocado, spinach, blueberries, banana, cocoa, and maple syrup. That's about it. Yet they taste like fruity/chocolaty indulgence. I may or may not have let the kids have these for breakfast one morning. I noticed that all of Katzinger's dessert recipes are naturally sweetened with either maple syrup or dates. I like that.

The Kale Chips were addictively good. Olivia and I ate the whole recipe -- which uses two big bunches of kale -- in a day. The flavorful coating is made from pumpkin seeds, sunflower seeds, pine nuts, and seasonings. I love how Katzinger throws all different seeds and nuts into her recipes. Such a good nutritional profile.

Finally, the Raw Kale Salad. I wanted to keep this one all for myself! But I shared with Tony and he gave it an enthusiastic thumbs-up, as well. Big, bold flavors from shallots, avocado, red bell pepper, and an Asian-inspired dressing with ginger and sesame oil.

Overall, I love this book. Even though we're not gluten-free, I was pleased with the big flavors and the consistent theme of using whole foods and natural sweeteners. Family-themed cookbooks are interesting to me because, you know, all families are different. Who's to say my family will like what your family likes? For example, many of Katzinger's recipes called for mushrooms. Apparently her family likes them. My kids think they are Satan's fungus. But I was able to pick out many recipes my own family would enjoy, and the rest are sure to please as well, with a little twerk here and there.

I helped sell yearbooks after school this week, so Olivia got to hang out in the parents' resource room, with its little kitchen play area.

The Quinoa Bowl

The quinoa bowl is Tony's favorite vegan meal. There are lots of recipes available, but sometimes I will just come up with something on the fly. Today, I tossed in artichoke hearts, kalamata olives, chickpeas, sundried tomatoes, roasted garlic, basil, and a lemon-olive oil-oregano dressing.

Olivia and I made our monthly Costco run today. We were offered samples of their new vegan burger and it was delicious, so I bought a box. I also picked up my usual tofu. We eat a moderate amount of tofu and I always like to buy organic, non-GMO.

Our usual staples. Real maple syrup, real vanilla extract, and organic frozen blueberries. Always a bargain, nowhere else has these items cheaper.

Costuming, roller-skating, and Swiffering. Girl can multi-task.

Homemade Pizza

The past couple of mornings I used leftover cooked quinoa in place of oats. Topped with peanut butter and cacao nibs, as usual. It was so unsatisfying for some reason! I was hungry again an hour later. I will stick to oats.

My parents came over and baby-sat the kids so Tony and I could go see Birdman.

For dinner we all had individual, homemade pizzas. Tony got me a new pizza stone for Christmas, so I thought I better try it out. I topped mine with marinara, green olives, jalapenos, and faux parmesan.

Cold Days

It's been unusually cold in Austin lately. Now when I say unusually cold for Austin, I mean temperatures in the 20s and 30s, so please don't pity us too much. But it does mean we're spending our afternoons indoors. There's been lots of coloring.

I bought a mandala coloring book for myself, but Jackson really likes it too. It's fun to just zone out and color alongside the kids.

Also, Olivia is starting to read! We have a set of beginning readers that we used with Jackson, and she is very proud of herself when she gets through one with little or no help.

Dinner was Vanessa's Lentil and Quinoa Stew from La Dolce Vegan, a favorite of Tony's, with some nice crusty bread.

All I Want For Christmas is Space Rocks

Today Olivia and I finished our Christmas shopping. Nature's Treasures is one of the most unique stores in Austin. They sell rocks and crystals. Olivia wanted to climb inside this geode, but she settled for a picture in front of the "space rock" as she called it.

She was so excited to look at all the crystals, it was very hard for her to remember to keep her hands to herself. She informed me she needed to take a break in the salt lamp room to relax a little bit.

For dinner I made the Everyday Quinoa and Chickpea Salad from Appetite for Reduction. I added in some cubed, baked tofu, but even still, this just wasn't super satisfying to me. Like, I would have to eat a lot of it to really feel full, which kind of defeats the purpose.
