Pancakes are one of the easiest foods to veganize, and there are a million recipes out there. I haven’t tried them all, but the version from the Urban Vegan's cookbook is my favorite so far. I like how light and bubbly they are and how lightning fast they cook up (with some thicker batters I've tried, it feels like I'm standing over the stove forever!)

I make these once a week and freeze them so Jackson can have pancakes for breakfast anytime during the week. We especially like them with apples and cinnamon added to the batter.
