Penne with Peanut Sauce

My BLT addiction has waned and a new obsession has taken its place -- Annie’s Goddess Dressing. It’s truly astonishing how much salad I can eat in one sitting when it’s covered in this crack dressing. For example, today’s lunch: combine romaine, spinach, grated carrots, and "parmesan." Top with dressing, devour, and go back for seconds.

For dinner I served penne pasta with steamed broccoli, covered with Easy Peanut Sauce from Vegan on the Cheap. Like many of Robin's recipes, the sauce takes only a couple minutes to make. As for the taste, well, the main ingredient is peanut butter, so of course I’m gonna love it!
