Tony typically goes out for lunch a few times a week, but the BVM household is in penny-pinching mode right now, so he's brown-bagging it. This week, he requested that I make him some kind of "quinoa salad thing" to take to work.
Since he would be eating it for a few days in a row, it had to be full of flavor, something he wouldn't get bored with. I cooked quinoa in veggie broth and tossed it with chickpeas, green and red bell pepper, carrots, frozen corn and frozen peas. Then I blended up a batch of Lime Tahini Sauce from Peas and Thank You, for him to drizzle on at lunchtime.
I would probably toss in some cubed, baked tofu to make it substantial enough for my taste, but Tony says he likes it just the way it is. He is sweet like that.

ReplyDeleteI've wanted this book for a while! It's hard to pick my favorite recipe ever. How can I choose? The one that most wowed me recently was the Pumpkin Baked Ziti in Veganomicon. I didn't think I would like it, but I looooved it.

ReplyDeleteI bought a copy of Peas & Thank You recently and while I haven't cooked a ton out of it yet, the blackberry cinnamon buns alone are worth the price of the book to me. So good!

ReplyDeleteMy favorite vegan cookbook recipe is a tough call. I make Joanna Vaught's parma from Yellow Rose Recipes the most often of any recipe. I'd be lost without it! Second, the chocolate raspberry cookies from veganomicon. Then there's the peanut butter oatmeal cookies from Vegan with a Vengeance, and the Chocolate Beer waffles from vegan Brunch. I CAN'T CHOOSE! The Peas and Thank You book is on my wish list. my husband will freak out of i spend money on more cookbooks :)
ReplyDeleteI think my all time favourite would be the infamous chickpea cutlets. I pretty much have that one memorized now.
ReplyDeleteFor as much as I read cookbooks, I still always go back to the Pumpkin Ziti from Veganonmicon. I've won over omnis, impressed good lookin' men, and found myself comforted and still enjoying complex flavors all in one dish. I also love that I can go really simple with canned goods and tofu, or step it up with fresh pumpkin and cashew nut ricotta.

This is a really hard question to answer. But I think it's probably raised waffles from Vegan Brunch. We make them all the time. Though the Cauliflower Leek Kugel in Vegan with a Vengeance is a close second.

ReplyDeleteMy all time vegan cookbook recipe? Wow, that's a tough one. I'm going to have to go with the one that changed my life the most, The Chocolate Cupcake recipe from Vegan Cupcakes Take Over The World. Learning to bake made me quit my job to start my not for profit bakery business!

The Big Gigantoid Crunchy Peanut Butter-Oatmeal Cookies from Vegan with a Vengeance by Isa Chandra Moskowitz. I've made it for so many events and they get nothing but rave reviews.

It had never occurred to me to be experimental with veggies in a burrito before, specifically to put broccoli in a burrito so, over ten years later, I am still so grateful for her cookbook!

My fav is a recipe from Tal Ronnen's cookbook "The Conscious Cook." I serve it when we have company. It's Pine-Nut and Basil Seared Gardein Chicken with Lobster Mushroom Beurre Blanc, Braised Kale and Roasted Fingerling Potatoes. It's a great dish to serve to non-vegan eaters and people are impressed that vegan food can be so delicious.

ReplyDeleteI can't narrow it down to just one, so i'll tell you my two favorite and most used cookbook recipes: the chocolate cake recipe from Joy of Vegan Baking and the vanilla cupcake recipe from Vegan Lunch Box. Both recipes (and books) are awesome!
