More Peas, Please

Mama Pea's blog is one of several that I try to read every day. Her funny stories about raising her two little girls always leave me laughing and nodding in commiseration, and her recipes are awesome. They are, for the most part, kid-friendly. And, just as important around here, easy to make with your kids. Like these BBQ kale chips we made recently.



 
Jackson loved shaking the seasoning onto the chips. And, maybe because he helped make them, he tried them and actually ate a big bowlful (and he hasn't exactly been a fan of kale in the past.)
Naturally, I picked up the Peas and Thank You cookbook as soon as it came out. So far, we've made three things.


Peanut butter and jelly muffins -- these were a huge hit.  I subbed almond butter for peanut butter, just for the hell of it.  Looking at that picture makes me wish we hadn't eaten them all already. I'll have to make more soon.


Pumpkin spice roasted chickpeas -- Jackson and Olivia had a lukewarm reaction to these, which shocked me since they are chickpeaholics. This recipe might be one that's more suited for adult palates, with its earthy flavors. Or maybe my kids were just chickpea'd out on this particular day. I liked them, anyhow.


This morning, I made the French toast. If you're not a morning person, make the batter the night before when you set your bread slices out to get stale. Then, in the morning, all you have to do is dip the slices and throw 'em on the griddle. This is a fast, easy French toast method, and everyone liked the results.
Can't wait to try some of Sarah's other recipes. Do you have this cookbook? If so, what's the best thing you've made from it so far?

  3. All of her recipes look great but I don't know that I've made any! She is hilarious to read in any case. The book looks very nice - it's been in at work for a while.
