Protein Ninja

I'm a big fan of Terry Hope Romero's previous cookbooks so I pre-ordered her latest, Protein Ninja, without reading a word about it.


When it arrived in the mail, I was a little surprised that a high percentage of the recipes rely on protein powder. I thought they'd be mostly tofu, tempeh or seitan-based. But, I do personally use protein powder to meet my protein needs, so who am I to criticize? It's a useful supplement! Romero suggests purchasing a few different kinds of protein powders -- pea, hemp, and brown rice -- to lend nuanced flavors to certain recipes. But that shit is expensive! So I went with unflavored Plant Head protein, which is a blend of all three, and I just used it in everything I made. It worked just fine. The powder's taste and texture weren't noticeable at all in my recipes.


First up was the Vanilla Almond Smoothie Bowl. What a creamy, delicious breakfast treat. I sprinkled on some hemp seeds to add a little crunch.


The Chocolate Hemp Avocado Muffins were Jackson's favorite, but Olivia claimed they weren't sweet enough. I like them with a little smear of Earth Balance.


The Early Bird Scrambled Tofu recipe makes a ton! I served it with Fluffy Rice Protein Drop Biscuits, which are the easiest and, yes, fluffiest biscuits I've ever made! Romero introduced me to a new method of using nearly-frozen coconut oil in the biscuit dough, and it worked out very well. The Tempeh Sausage Sage Gravy was also fantastic.


I took the leftover scrambled tofu and made it into breakfast quesadillas along with some cashew cheeze, vegan chorizo, and salsa.


The biscuit recipe makes eight, so I used the rest in a different recipe.


The Tomato Gravy and Biscuit Kale Bowl recipe starts by reassuring the reader that tomato gravy is indeed a thing. A measure of trust was required on my part, but it all worked out and the tomato gravy was, in fact, the best part. And that is saying a lot because I love those biscuits.


The Tempeh Bacon Strips included in the above recipe were good on their own as well. I marinated them overnight to soak up the most flavor. Jackson and Olivia gobbled them up.


Edamame and Pea Avocado Toast was one of the recipes that did not include protein powder. The pea and edamame spread was good and filling, and all the toppings made this single piece of toast almost feel like a meal! There is an entire chapter dedicated to nothing but toast recipes, and I want to make them all.


Next, I made two different kinds of veggie burgers to freeze for future meals. They both depend on protein powder as a binder. They held together well. The Green Goddess Burgers are chock full of vibrant green goodness -- spinach, parsley, cilantro, mint, and scallions. The Sunny Oat Burgers are a more traditional hippie-type veggie burger with a smoky flavor, encrusted with rolled oats and sunflower seeds.


Finally, the Five-Spice Chickpea Peanut Noodle Bowl was super filling and satisfying. Romero's recipes have always been complex, and this is a 4-parter. Roasted chickpeas, salad, soba noodles, and peanut sauce are prepared individually. But don't be intimidated by all the steps. I had everything ready to assemble by the time the chickpeas were done roasting. 



The only thing I found lacking in this book was that no actual protein content was listed for any of the recipes. I figure that's because it differs depending on what brand of protein powder you use. An estimate would be appreciated though, since protein is the book's focus. But in terms of the actual foods and flavors in this book, I am nothing but impressed! Romero pairs various ingredients and flavors in ways I never, ever would have thought of, and each dish feels elevated and special. Even if you already get plenty of protein, I would totally recommend adding Protein Ninja to your collection.

Olivia Turns Six!

We celebrated our baby girl turning six with a party at our house. Several of Olivia's school and soccer friends attended. She took her role as hostess seriously, donning her finest fairy costume, tiara, and jewelry.


We went with a Costco birthday cake because they are delicious and feed an army for very little money. Jackson picked out the cake decoration.


Pizza, cake, and a delightfully out-of-tune rendition of "Happy Birthday."


I've noticed a trend of not opening birthday presents at the party, but some of Olivia's friends said they were excited to see how much she loved their gift. So we went ahead and let her open them.


Then it was out to the backyard for some good old-fashioned party games. We did egg-and-spoon races, and sack races too.

Olivia had school on her actual birthday. She reported that her teacher gave her a crown and the class sang to her. After school, Tony and I gave her a couple more small presents from her family.


Finally, the following weekend, we celebrated at Chuy's with her grandparents. I had the guacamole soft tacos.

Olivia, I love to see the big girl you are becoming. You are a kind and caring friend, daughter, granddaughter, student, and teammate. You are creative and inquisitive, independent and strong. I am so proud to be your mama.

Lucky Robot

Tony had been telling me how great Lucky Robot is. He goes there for lunch sometimes since it is near his office. Finally we all got to try it. He was right! Can't wait to go back. The decor is kitschy and fun and adorable.

I started with some miso soup, slurp slurp!


Then I had the Veggiepillar sushi roll, with eggplant, carrot, cucumber, avocado, and serrano pepper, with yuzu jelly for dipping (as well as the usual wasabi, ginger and soy sauce.) 


Jackson and Olivia shared a veggie udon bowl with tofu, with lots of crispy seared broccoli. It was delicious as well!


For dessert we shared a chocolate cupcake with white chocolate frosting and a white chocolate heart on top. Love.


These two. So much love.

All the Cookies

This past Christmas we started a new tradition of baking cookies to give to teachers and support staff at Jackson and Olivia's school. The kids picked which cookies to make (all recipes were from Vegan Cookies Invade Your Cookie Jar) and we ended up with a great assortment.


Linzertorte Thumbprint Cookies, filled with luscious raspberry jam.

Can't go wrong with cinnamon-dusted Snickerdoodles!


I love the appearance of these Chocolaty Crinkle Cookies when they come out of the oven.


The Macacamia Ginger Crunch Drops were my personal favorite. The nuts, ginger, and coconut extract give them a unique, tropical flavor.


Finally, our Peanut Butter Chocolate Pillows turned out a little weird. I misread the directions and used all black cocoa powder, instead of a mix of black and regular cocoas. The cookies came out a little oily. We kept them and didn't include them in the gift boxes! 


In addition to the cookies, we made a bunch of vanilla mini-cupcakes for the school's winter fundraiser.


After all that baking, it was nice to clean up and put on some fancy clothes for Tony's work holiday party.


This is really the last of my holiday posts, haha! The elves send their best until next year.

Urban Air

A new trampoline place called Urban Air recently opened in our neighborhood. Naturally, Jackson and Olivia dove right in.

After working up an appetite, we met my parents at 600 Degrees Pizzeria in Georgetown. They do pizza by the slice, and there are a ton of specialty pizzas to choose from. I went with with the "Georgetown" featuring smoked gouda, portabella mushroom, tomato, spinach, and pesto. The slices are huge! Look how tiny my fork looked in comparison!

Snow Day, Texas-Style

Since we don't get actual, natural snow here except once in a blue moon, there are companies, like this one, that specialize in providing "snow day" experiences to snow-deprived Texan children. We attended one this year at the Galleria, an outdoor mall. 


It was slushy and cold and snowballs were flying fast and hard. We parent spectators kept having to step back further away from the snow, to avoid getting nailed in the face by our frenzied, snow-crazed offspring.

Afterwards we tracked our soggy, chilled kiddos into the nearby Buenos Aires Cafe for a clothing change and a warm meal. I started with a verdura empanada, filled with spinach and ricotta.


I also enjoyed a mixta salad, with greens, tomatoes, carrots, pickled onions, and citrus vinaigrette.


The desserts were all on display that, naturally, caught my kids' attention. We ended up sharing a couple of them: the strawberry-and-whipped-cream-laden pionono, and the tart and wonderful meringue-topped lemon pie.
