Tonight was another "
breakfast for dinner" night in our home. I made the
Classic Broccoli Quiche from
Vegan Brunch.
Such a cute little quiche! The ground cashews give it a nice creamy texture. I took a shortcut and chopped up the broccoli into really tiny pieces using my food processor.

If you ever go to Portland, the Back to Eden Vegan bakery has the best quiche I have ever had! Oh my gosh I could have eaten the whole thing! (:
